Of course, I’m on the eat-drink-live everything pumpkin flavored bandwagon, because gosh damn it’s delicious!!!

The So Delicious Pumpkin Spice Coconut milk had me saying “Is this real life?!” It’s better than pumpkin pie… It’s better than any pumpkin flavored anything I’ve ever tried. I drink it on its own, in coffee, and in tea. I plan on making over night oats or baked oatmeal with it soon.

Don’t miss this one my friends!

I had to forcefully keep my hands in my pocket while at the store, because there is also a Mint Chocolate variety. If I bought that, my life would be over as I know it. I’d do nothing but down cartons of it at a time.

Who am I kidding… I’m getting it next time and I’ll let you know.

Avocado Pizza and a Miracle



Amy’s Vegan Margarita Pizza with avocado slices is uh-may-zing! I mean, how could it not be? I definitely recommend this combo… I added some sea salt which was the perfect finishing touch.

Well, the impossible has happened. Hell has frozen over, pigs have flown, it’s a miracle! My meat and cheese loving boyfriend has agreed to go vegan for 6 months! Ok, “agreed” is stretching the truth. He lost a bet, but nonetheless, we are now in a 100% vegan household! He has made it through 2 weeks and is going strong. And, it’s so nice to not come home to the smell of him cooking burgers or chicken. This is truly a miracle!

Favorite Vegan (Re)Creations


Before committing to a vegan lifestyle, and way before becoming vegetarian, I went out to dinner and had (what I thought to be at the time) the most delicious sandwich I had ever eaten. The sandwich featured fried chicken, melted cheddar cheese, honey mustard dressing, and white bread toasted with loads of butter (so healthy, right?)

For some reason, I was reminded of that sandwich, and wanted to veganize it. It turned out wonderfully! I used wheat bread, Gardein Chick’n strips, Daiya Cheddar style shreds, and a spicy BBQ sauce.

I’m doing it! Although my diet is pretty clean, I still want to drop some weight and make sure I’m getting in enough cardio in addition to the strength training that I do.

I found an app called C25K Free that keeps track of the jogging and walking intervals, which is awesome!

I’m no stranger to the elliptical or
treadmill, but for some reason I have been really intimidated to run in public. I’m really looking forward to being able to run 3.1 miles nonstop!

Are there any runners out there with advice?

Fabulous Avocado Potato Salad



This is hands-down the best, most delicious and flavorful potato salad I have ever had! It’s very simple to make, requires just a few ingredients, and is very addicting. My carnivore boyfriend said that it’s his new favorite food! Now that is impressive!

2 baked potatoes, cut into cubes
1/4 cup chopped yellow onion
1 avocado
2 Tbsp oil (I used olive)
1 Tbsp minced garlic
1/4 tsp black pepper
1/4 tsp onion powder
1/2 tsp sea salt (and more to sprinkle on top)

1. Bake your potatoes and cut them into cubes.
2. Dice up your onions, and add them to your potatoes.
3. In a separate bowl, smash up your avocado. Leave a somewhat lumpy texture.
4. Incorporate the oil and seasonings into the avocado.
5. Add the avocado mixture to the potatoes and mix until the potatoes are covered.
6. Sprinkle additional salt and pepper on top.
7. Eat the entire bowl!

I’m just so impressed with how good this is. Next time, I’ll add fresh onion and yellow corn.


Sunday Night Dinner



I love making something special for Sunday night dinner… Even if it is just for me! Tonight I made Spanish rice with corn and tomatoes, and avocado, onions, and pepitas on top! Simple, healthy, and delicious… Can’t beat that! What did you make for your Sunday Night Dinner?
