Happy Holidays!


Well I hope you all are enjoying family, friends, and/or good food! One of my goals is to post and read more blogs in the coming year! I received the Oh She Glows cookbook, so I’ll definitely be posting some pics of recipes that I’ve tried. The pic here is my puppy sleeping in the book about 3 minutes after I got it. I had to wait until after her nap to read it.

Couch 2 5k


I’m doing it! Although my diet is pretty clean, I still want to drop some weight and make sure I’m getting in enough cardio in addition to the strength training that I do.

I found an app called C25K Free that keeps track of the jogging and walking intervals, which is awesome!

I’m no stranger to the elliptical or
treadmill, but for some reason I have been really intimidated to run in public. I’m really looking forward to being able to run 3.1 miles nonstop!

Are there any runners out there with advice?

I vow to never take my health for granted again…


After various tests, I feared the worst for me. Did I have the big C? How would I tell my family? How would I afford the treatments? How would my fiancé get along without me?

All of those fears, thoughts, and questions had been flooding through my mind for weeks. I’ve been so worried and scared.

I learned today that I am healthy. It is the biggest weight off of my shoulders. I must always remember this day and how I feel. I can never, ever take my health for granted.

Although I eat a vegan diet, I promise to eat cleaner and make exercise a priority. I am just so grateful for this wonderful news that I had to share.

1. If you could only eat one food for the rest of your life what would it be?

Well, I would say smoothies, so I could still eat as many fruits as possible, but that seems a little like cheating. I would have to say sweet potatoes, Spanish rice, or strawberries.

2. What recipe should I post up next?
Anything with coconut!

3. What are you going to do tomorrow?
Work as usual, and hopefully a nice walk or trip to the gym.

4. What’s your go to savory comfort food?

I LOVE a good bowl of veggie soup or beans and rice.

5. What inspires you?

People that I see on WordPress and Instagram inspire me to eat better and be healthy.

6. What’s your favorite sweet treat?
Dark chocolate or lemon poppy seed anything!

7. What’s something you could live without?
I could never live without my family, friends, or a good bowl of fruit (or vegetables).

Summer, definitely! I love to be outdoors and in the sun.

Well, as a vegan, my least favorite foods come from animals. My least favorite fruits are melons.

Diabetes and High Carbs


Hello there!

I have been a juvenile diabetic since the age of 4. I am vegan and have a pretty good lifestyle, but I do struggle with what I assume to be diabetic fatigue. I have been researching high carb diets, and am very impressed with the results. I would really like to try it, but it seems to contradict everything I know about controlling my glucose levels (I am insulin dependent).

Any help or advice would be appreciated! Thank you!
